Day 29 – Like the Chicken–Recipe Share
Chicken can be stretched a very long way to make any meal be a bit more flavorful and filling. And, if you have been shopping lately it also takes less affect on your wallet. Here are just a few of our chicken recipes. Hope you can get creative and enjoy creating some of your own too!

Mediterranean Stuffed chicken |

You will need 4 Chicken breasts, 1/3 cup sun dried tomatoes, 3 tsp garlic, 1 tsp. orange zest, 1/2 cup fresh basil, and a block of mozzarella cheese
Grate your orange into zest and set aside. Slice your cheese into slices (I used 2 slices per piece of chicken) and set aside. Put all other ingredients on a cutting board and chop fine. Add the orange zest and mix together.
I served this with Crockpot mashed potatoes, homemade Crescent rolls, and sautéed green beans with red onions.

Another easy stuffed chicken recipe is simply the amount of chicken breasts you need and prepared stuffing. Simply stuff the breasts with stuffing and sprinkle salt, pepper, garlic, and a touch of olive oil on the tops before baking at 350 til done!

Curry Chicken |
| 4 chicken breasts chopped and seared in olive oil Sautee 1 onion and 2 cloves of minced garlic with chicken Add 3 cans cream of chicken 2-3 tsp. curry powder salt and pepper to taste 1 cup water 4 Chicken bouillon cubes Simmer or throw in crockpot on low Serve over rice. |

5 chicken breasts, chopped and sautéed with garlic in olive oil |
You can just use the sauce and put over unfilled noodles too! Add a touch of flare and throw in shrimp instead of chicken.

Slice your Chicken breasts in order to fully stuff. Do not cut all the way through. Place on a covered cookie sheet.
After your chicken is opened stuff your filling evenly into each breast.
Place your cheese on top of fillings and close each piece of chicken.
Use toothpicks to secure edges. Drizzle olive oil over each piece and salt and pepper. Bake at 450 for 30-35 minutes. Let rest for 5 minutes before serving.
