Flourless Monster Cookies
I am a baker at heart so making different variety of cookies is fun for me. I was asked to make a few types of cookies for an adoption shower so I thought this would be the perfect cookie for many reasons. The recipe makes TONS and it doesn’t have flour in it so for those who are trying to watch their thighs shrink instead of grow would be more apt to enjoy this option.
I used to make this cookie a bunch when we worked in youth ministry due to gluten intolerances. I enjoyed making and tweaking different recipes to make sweet options without the flour.
Monster Cookies
| 3 eggs 1/2 lb. brown sugar 1 cup white sugar 1 tsp vanilla 1 tsp. corn syrup 1 T baking soda 1 stick butter 4.5 cups oatmeal 1- 18 oz jar peanut butter 1/2 bag chocolate chips (can add more if preferred) 1/2 bag m&ms (can add more if preferred) Cream eggs, sugars, vanilla, soda, butter, peanut butter, and corn syrup. Blend in oatmeal and candies. |
(and if you are on Weight Watchers these are 2 points each—just don’t make them huge)
