Meatball Subs & homemade Potato Salad~Day 23
Some days lend for a little lighter meal, but planning and preparing is still involved. I can purchase meatballs on great sales and with coupons it’s even a better steal. So, when the freezer is home to a few bags of meatballs…subs are what’s for dinner!
I tend to just throw all my ingredients in the crockpot and cook on low most of the day. Super easy!

Molly’s Meatball Subs |
| 28 oz Meatballs 1 onion, thinly sliced 1 minced clove garlic 1 bell pepper, thinly sliced Sauce: 1 (6 oz) tomato paste 2 (14.5 oz) diced tomatoes 1 (14 oz) whole or crushed tomatoes 1 tsp. oregano 1/2 tsp. salt 1 tsp. pepper 3/4 tsp. basil 1/2 tsp. onion powder 2 1/2 T sugar Put all ingredients in crockpot. Cook high for 3 hours or low for 5-6/ Serve on hoagies or buns with mozzarella cheese. |
Serve with a nice scoop of homemade potato salad and fresh carrots on the side!

Potato Salad |
| 8 potatoes, cooked and chunked 1 1/2 c. mayo 2 T cider vinegar 2 T sugar 2 T mustard 1 tsp. salt 1 tsp. garlic 1/2 tsp. pepper pinch of paprika 3 celery ribs 1 onion, chopped 5 hard boiled eggs Boil potatoes until softened a bit, drain and cool. |
