Mexican Stuffed Shells & Homemade Salsa~ Day 27

1 lb. Ground beef ½ onion, chopped 1 package taco seasoning Simmer above ingredients. 12 jumbo shells: boil and toss with EVO (olive oil) 4 oz. Cream cheese. Add this to meat until melted. 1 c. taco sauce 2 c. cheese 1 ½ c. tortilla chips, crushed Directions: Pour 1 cup salsa in bottom of 9×13 pan Once shells are boiled stuff with meat mix and then place in 9×13. Pour taco sauce over top of each stuffed shell. Bake at 350 for 30 minutes covered. Uncover and top with cheese and chips and bake for another 15 minutes. Green onions & Sour cream for garnish |
We LOVE Mexican food, so any excuse to eat chips and salsa is wonderful. Fresh salsa is my favorite.

| 6 diced tomatoes 1/2 red or yellow onion, diced 1 minced clove of garlic jalapeño peppers (your desired amount) I use 1-2. 3 T cilantro 1/8 tsp. oregano 1/4 tsp. cumin 1/8 tsp. salt 1/8 tsp. pepper 1 freshly squeezed lime Toss and taste. Add more spices as needed. |
