Mexican Stew~ Day 3
One of my favorite Mexican dishes I loved as a kid was Mexican stew! With the price of beef, I realize why my mom made this more than just regular tacos. It stretches a bit further and doesn’t need as much meat. Plus, if you are like me and often cook with what’s on hand, you can substitute ground chicken or ground turkey in place of beef.
My recipe typically feeds and army, so no worries if you want to cut the recipe in half or even fourths. It freezes great too.
Brown up your meat with onions, garlic, and peppers in a medium pot.

Add spices, tomato, and water. Simmer on low heat or crock-pot for several hours.

| 4 lbs ground beef (turkey or chicken) 2 onions 2 large green peppers (you can use any color) 2 large cans (15 oz each) tomato paste 4 large cans (15 oz each) of tomato sauce 1-1/2 cups water 4 tsp. salt 4 tsp. oregano 4 tsp. sugar 4 tsp. cumin 1 T minced garlic Taco Fixings |
Serve on top of a bed of lettuce complete with any taco fixings you desire. We love to top it off with some crushed Fritos for the crunch and extra pop. Great also over rice or with rice and black beans as the side.
