Yummy Bean salad

This is another one of my favorites! I know, I have lots of favorites, but honestly, if I could afford to eat salads every meal I so would!!! Anyhow, this one is pretty simple and quite yummy. We love to use tortilla chips to dip in it. But, I have known some people to just eat it plain…although I’m not a big fan of that. So, hope you enjoy!

Beans & more beans
1 can kidney beans
1 can black beans
1 can garbanzo beans (rinse and drain)
2 chopped celery ribs
1 medium red onion, diced
1 tomato, diced
1 cup corn (frozen or canned)
Pour all into a mixing bowl and then prepare dressing.
Dressing: 
3/4 c. salsa
1/4 c. vegetable oil
1 lime (cut open and squeeze out juice)
 1 1/2 tsp. chili powder
1 tsp. salt
1/2 tsp. ground cumin
Chopped cilantro (optional)
Mix and marinate salad for a couple of hours before serving with your favorite tortilla chips!
