What kind of cookies do you want this week? That was my question to my sweet hubby the other day while I had energy to make some cookies! Even before I asked him I had already grabbed out the recipe I figured he’d ask for—Snicker doodles! Sure enough—that was his answer!
Unfortunately my waste line has seen way too many cookies over the years, so I have developed a completely different system for my cookie baking. Thanks to my precious momma I was taught to always have some kind of baked good readily available for pop in guests or a quick needed sweet treat for my hubby, children or friends. So, I try to have cookies available 24/7! Now, that used to mean that I would just make a huge batch every week and then do it again when they were gone. But, with living in the south I came to realize that many of my baked goods would get nasty stale and gross way more quickly than when I lived in the north. So, I have compromised and honestly like the way I do it now so much better!
I usually mix up a batch of whatever cookie recipe I desire and then just make one cookie sheet of cookies and throw the rest of the dough in the fridge or freezer. Lately with school treats and other such it just stays in the fridge making it really easy to just pull it out on a moments notice and have freshly baked cookies with no mess!
So, if you are ever in the neighborhood and want a cookie and a glass of milk—pop in and I’ll pop some in the oven just for you! And, I am so NOT kidding!
After a few different recipes and lots of trials this is the recipe that I adapted and love for snicker doodles. I am sure that there is a similar one out their printed in the books, etc, but I loved finally getting this one to work!
1 c. butter, softened (do NOT use margarine—that’s nasty)
3 c. sugar
2 tsp. vanilla
4 large eggs
5 1/2 cups flour
2 tsp. cream of tartar (if you don’t have this just add several drops of white vinegar—works the same and is cheaper)
1 tsp. baking soda
1/2 tsp. salt
Cream butter, sugar and eggs. Combined dry ingredients and mix all together.
Chill dough for 15 minutes
Mix together 6 T sugar and 6 tsp. cinnamon
Roll dough into the size balls you desire and roll in cinnamon sugar. Place on cookie sheet and pat down very slightly. Bake at 350 for 10 minutes!
Take them out at 10 minutes and let sit on pan for a few before removing them.
No one likes crunchy snicker doodles—well, no one in this house does! Enjoy!

Mmmm…looks tasty! It's great to be able to make homemade cookies with minimal prep! And bonus…I can always sneak in some cookie dough during the kids' naptime. 😉 lol!!
