Day 18- Filling Food Favorites—Recipe Share
Here are just 3 recipes that are easy to prepare and a great filler at any meal.
Crescent rolls, Baked veggies, & Smashed potatoes
Crescent Rolls
1 cup warm water
1 cup warm milk
1 T honey
2 eggs
2/3 c. soft butter
2/3 c. sugar
2 tsp. salt
7 1/2 c. flour
2 packages yeast (4 1/2 tsp.)
1/2 c. soft butter
Dissolve sugar in water and milk and add the yeast and let sit for about 10 minutes until it’s foamy. Stir in egg, salt, 2/3 c. butter, and honey. Stir in the flour and knead dough for 5 minutes.
Place dough in a greased bowl and cover with a towel until doubled (about 1 hour). Divide dough in 1/2 on floured surface and roll into circle. Spread 1/4 c. butter on each round, spreading to the edges. Cut each circle into wedges and roll gently but tightly.
Let rise until doubled. Bake at 400 for 10-14 minutes.
They are amazing!
Baked/Broiled Veggies
Bags of frozen or fresh veggies
I love to use broccoli and the blend of Broccoli, Cauliflower, and Carrots
Spread out on a cookie sheet- single layer, if possible.
Drizzle EVO (extra virgin Olive oil) all over the veggies. Sprinkle with season salt, garlic, salt, pepper or whatever spices you want for the present meal. I’ve done cajun and lemon pepper too. Yummy!
Throw in oven at 450 and let bake for 30-40 minutes. Sometimes it takes longer if you want them extra crispy which is what my kids love. Stir occasionally. Enjoy with any meal! This is my children’s favorite way to eat vegetables. We’ve used brussel sprouts too and my 8 and 2 year old kept popping them in their mouths.
Smashed potatoes
Wash however many potoes you are needing to feed your family or company.
- Preheat oven to 450 degrees.
- In a large pot of boiling water, cook potatoes until tender, about 15-20 minutes; drain well.
- Place potatoes onto a baking sheet. Using a potato masher or fork, carefully smash the potatoes until flattened but still in one piece. Top with olive oil, garlic and thyme.
- Place into oven and bake for 18-20 minutes, or until golden brown and crispy.
- Serve immediately.
You can sprinkle with whatever spices suit your fancy. We typically use garlic, salt, pepper, a pinch of paprika and a healthy dose of Parmesaan cheese to top it off sometimes!
Enjoy!
Come back tomorrow for several fun dessert recipes you’ll be making as often as possible!
