Pumpkin Bread with Cinnamon Butter-cream Frosting~ Day 17
Some days it’s a warm slice of sweet bread that makes everyone a bit happier. I love all things pumpkin so I am excited to share one of my many favorites! The pumpkin bread is moist and wonderful all by itself. But, if you want the bread to be a little over the top then add the frosting and a nut garnish on top. I promise you won’t be disappointed.

Pumpkin Bread with Cinnamon Cream Cheese Frosting |
1 3/4 cup flour1 1/2 tsp. ground cinnamon1tsp. baking powder1 tsp. baking soda1/2 tsp salt1/2 tsp. nutmeg1/2 tsp. allspice1/8 tsp. cloves2 large eggs3/4 cup. brown sugar1/3 cup sugar1/2 cup oil1 1/4 cup canned pumpkin1/2 cup chopped toasted pecans or any nut!Preheat oven to 325Combine dry ingredients. Beat eggs and sugar for 2 minutes. Mix all together and pour into a loaf pan or muffin tins. Bake for 60-65 minutes for loaf or 15-18 for muffins. Insert toothpick to see if clean.Butter cream frosting:1/4 cup butter, softened2 T pumpkin1/2 tsp. cinnamon1/2 tsp. vanilla3 cups powdered sugar2 tsp. milk1/4 cup chopped pecans or walnuts for sprinklingCream butter, pumpkin, cinnamon, and vanilla. Add powdered sugar and blend. Add milk and blend together! Frost muffins or cake when cool and sprinkle with nuts! |
